Thai inspired chicken meatball soup
/I did not make the whole recipe because I have sm Dutch oven, but what I made was amazing.. you could even call it amazeballs…chicken amazeballs… I included what I added so if you have a medium sized or more Dutch oven, double my ingredients.
Like many of you I have been distracted and upset by the events of well, … let’s say events, for quite a few moments. It seeps into my life in a bunch of ways- the quality of my sleep, my lack of excitement over which pair of leggings in my increasingly slim leggings collection I should wear, and yes, sad as it is, sometimes in my cooking. Folks we had a near miss with this recipe and I accidentally added too much fish sauce since I was not making the whole recipe. In what could accurately be described a moment of real home chef panic (if it is an actual thing), I immediately drained the excess as I could, added some sugar, grated some ginger and crossed my fingers and my toes. As luck would have it, this happened to be my lucky 30 minutes of my month and my meatballs were saved from certain disaster. Nobody cooks in my kitchen but me, at least nobody has permission to do so I definitely can take credit for this recipe success!
In terms of adjustments and additions to this recipe, I added lemongrass, and more ginger than the recipe called for. Since I had a fish sauce mishap with the making of actual meatballs I cut down on the amount of fish sauce in the broth and it was wise.
The ingredients
lb of ground chicken
5-6 tbls of diced cilantro
jalapeno seeded and diced
2-3 garlic cloves, diced
3 tbls of ground ginger
tsp of fish sauce plus a drizzle for your broth
7 oz of coconut milk
2 cups of chicken stock
2 stalks of lemon grass
tbls or so of granulated sugar
Serving suggestion- over microwaveable ramen…
Dice your cilantro
Grate the ginger and dice your garlic and DESEEDED decored jalapeno. Make twO piles of the mixture
Add CILANTRO, a pule of tge seasonings and 0.5 tbls of fish sauce to your ground meat.
Add vegetable Oil to your dutch oven. In batches, cook the meatBalls for 5-8 minutes on both sides until cooked through.
Keep your raw meatballs and cooked meatballs on their own plates. Put aside.
Add the Reserved herbs and lemongrass in your dutch oven. Cook until aromatic and add coconut milk, chicken atock fish sauce and sugar. Cook on medoum fOr 6-9 minutes.
Add yoUr meatballs and cook for 11-13 minutes. Serve hot over ricr, or in my case, microwaveable ramen noodles.
