Buffalo chicken meatloaf

Hits This pretty much checked all the boxes for me. Spicy, healthier than traditional meatloaf and very simple. I omitted the cheese crumbles from the recipe as well as the bacon when I made it because I was looking for something a little bit healthier than the decadent version described in the recipe. It was still amazing. In included the original recipe ingredients and noted directions, in case you’re feeling fancy.

Misses I love spicy. Like I LOVE spicy. And this needed some light bleu cheese dressing for me as a dipping sauce because spicy meat and spicy sauce made this very spicy…I am not complaining, but you might if you’re sensitive to heat. If so, reduce the amount of wing sauce (I used siracha) in the meat mixture and the amount in the sauce…Or make sure you have some milk on hand to help cool your spiced out stomach. Also, I love celery but I did not have some on hand so my meatloaf was sans celery.

Ingredients

MEAT:

  • 1 cup dry whole wheat bread crumbs

  • 2 celery ribs, chopped

  • 1 small onion, chopped

  • 2 large eggs, lightly beaten

  • 1/2 cup Buffalo wing sauce

  • 3 garlic cloves, minced

  • 1 teaspoon pepper

  • 1 cup crumbled blue cheese, divided

  • 1 pound ground chicken

  • 6 bacon strips

    GLAZE:

  • 1/4 cup Buffalo wing sauce

  • 4 teaspoons prepared mustard

  • 4 teaspoons honey

  • Additional chopped celery, optional

Mix it.

Mix it real good.

Preheat the oven to 350 degrees. Mix all the ingredients for the meatloaf together. The original recipe called for using bleu cheese crumbles and covering in bacon which seemed enticing but man, I was looking for healthy. I ommitted the bleu cheese crumbles and bacon..but it was still awesome

Make your mark. your meat-loaf mark

In your baking dish form you meatloaf into a loaf shape making sure it is the same height throughout so it cooks evenly. It could slightly come to a peak in the middle but nothing extreme.*If you’re adding the bacon, this is where you would lay the bacon on top of the loaf.

Honey Add the heat…& honey

Make your sauce by combining the mustard, remaining wing sauce and honey. Drizzle over the meatloaf and cook for app 50 minutes….

Here’s a love story: A package of ground chicken saw a bottle of siracha walking down the street. The chicken whistled (which was hard because it was as you know, a package of ground chicken), the Siracha batted its eye lashes (again, hard, because it was an actual bottle of Siracha), gave a “Come hither look” and rather than swooning said “We could make beautiful meatloaf magic”….

The ground chicken said “I love the way you think- let’s get out of here”

….And this meatloaf was born from the twinkle in the ground chicken’s eyes….

yes. If you’re thinking what I am thinking, it is very romantic.

It is spicy, hearty in a way which would be described by people as “guilt free” and very easy to make. I would cook the onions on their own if you can and then add to the chicken mixture. Often I feel guilty about cooking so much meat, but if I make something which maximizes the number of meals the particular serving of meat can be served for I feel like I am trying to cook more sustainably. This would be good served with some crisp vegetables and a healthy starch.. or you could go decadent and make some serious potato smash.
