Grilled stuffed mini Bella peppers skewers
/Grilling in my backyard on my trusty smoky joe? Yes please.
I love this type of pepper and lately they’ve not been as expensive as usual so I have been scouring the internet for recipes to use them. I combined a few, added the skewers because everybody loves things on sticks in the summer- (popsicles, corn dogs,… well I am sure there are more examples).
These were fun, low carb (for the low carby folks in your lives), and deliciso… make ‘em… you’ll see!
Ingredients
3oz cream cheese
3 tbls of sour cream
salt and pepper (generous, but based on taste)
TVs of lime juice
2 tbls of chopped cilantro (or so)
diced shallot
Plan of attack
Soften the 3 oz of cream cheese
Add the diced cilantro, chopped shallot, salt, pepper, and sour cream to your sm boWl and mix throughly
I usually try and keep to the habit of having a racel ray garbage bosl and this is mine for this recipe
Core and deseed the peppers by putting your knife inside and clearing the insides.
When you cut the top off your PepperS, cut in a curcle snd simply lift the top off..
Using your knife, stuff the peppers with your cream cheese fIlling. Cover a refrigerate.
Soak your skewers in a baking dish for minimum of 30 minutes
Places the peppers on rhe skewers, rub the outside with olive oil and season eith salt, pePper snd powdered garlic
Place on a hot grill until both sides are charred
Remove from the grill snd serve hot (or cold)
