Easy Marshmallow Sprinkle Pops

Marshmallows and sprinkles and chocolate! Oh my!

I made these originally as an idea for some serious, let’s call it, flair, for my sprinkle cake so it could have serious sprinkle bragging rights, but they seemed like such a good idea, I made a mountain of these puppies. While I know I used the correct spelling of flair when describing this cake adornment, I could have easily used the word “flare” like “oh my gosh with chocolate dipped marshmallows this cake is on fire!…in a good way” Can ya say, #cakesolarflare? It is possible (though perhaps not probable) these pops being unleashed into the universe could be interrupting cell service and setting off car alarms everywhere with the sheer potency of their enthusiastic sprinkle power.

Find yourself some lollipop sticks, use your half eaten bag of marshmallows, melt some chocolate, and sprinkle away into fancy Flair lollipoptown…yes, I am saying there is such a place, so mind your manners, be careful where you dip your pops and aspire to be invited there.

I would say don’t freeze them because it throws off the marshmallow’s ability to adhere to the stick, but hopefully you make them and then they get eaten in a quicker turnaround time than mine did. I put them in the freezer because well, my apt can be pretty hot, but learn from my experience, strength, hope and marshmallow mistakes…nobody likes pops with droopy marshmallows or worse, marshmallows at half staff…

Ingredients

a bag of marshmallows, traditional size

many sprinkles or toppings (chocolate crunchies would be awesome)

For ganache:

cup of chocolate chips (chocolate semi sweet)

2 tbls of butter

splash of milk

For white chocolate melt

Cup of white chocolate chips

2 tbls of olive oil

Finished white chocolate dipped pops

Ganache: i made chocolate ganache by adding butter and a little splash Of milk to mElt the chocolate. I am not a candy making expert but what i do know is temperature is king/queen/genderfLUidleader when dealing with confection, so my marshmallows were having temper tantrums witH traditionally melted chocolate…so….i improvised. Dip your marshmAllows in Your chocolate, and then immediatelY dunk in your sprinklEs, nuts, cookie little bits- etc…place the pops Top down on your plate, and allow to set/cool in a cool place.

White chocoLate melt: add 2 inches (or so) of water to your mediuM saucepan and place either a double boiler (pictured) or glass bowl over tHe top. Turn up so water boils and add your chips. Using a heat resistant spatula (silicone) keep stirring the chocolate, adding olive oil as needed when it needs more liquid. When it is glossy and smooth, dip your pops, and repeat Your process listed above.
